Quinoa is simple to cook, terrific substitute for rice or couscous. To cook, use 2 cups of liquid per cup of quinoa. Combine liquid and quinoa in saucepan, bring to a boil, reduce heat to a simmer, cover and cook until the grains are translucent. Cooks in about 15 minutes. Use this basic quinoa recipe as a starting point and used in almost any meal. Delicious in soups, salads, etc.
